It’s heating up here in New England! How are the temps in your neck of the woods? Before we moved here so many people told us a house with no A/C really wasn’t bad because you’d only wish you had it a few days out of the year.
Well, you people are liars and we’re going on, oh I’d say day 30, of wishing we had A/C and sweating our tails off! The silver lining, as my mom would say, is the fact that it does force my family to slow down a bit and relax.
For my family we are cutting out as much refined sugar as possible. No more cookies, packaged sweets or tempting treats that we can’t say no to. Seriously, we have NO willpower! Because excess sugar is a huge cause of inflammation in the body, (check out the documentary Fed Up) it is something I want to protect my family from. Trouble is, sweet treats are just so yummy!
So, the other night I decided to throw some bananas, almond milk, shredded coconut and raw cacao powder into my little immersion blender and viola…a yummy, icy, sweet treat appeared! It was hubby approved and devoured in about five seconds, but after my tummy digested the goodness I realized I did like the ice cream…well it really was more of a gelato consistency…but I wasn’t “in love”.
With a week or so of marinating the ingredients in my mind, I was inspired last night to make another batch of the banana gelato with a few tweaks. I nixed the coconut and put less cacao in. I think that is why I didn’t love it last time…the chocolate flavor was too rich. Crazy, right?!?
