Pasta, pasta, pasta! That is what you’ll hear my lil guy saying as he runs to the fridge for pretty much any meal lately. He even asked for pasta this morning! We were spoiled this weekend when my mama made her spaget with meat sauce that has been a delish family recipe for generations. Leftovers were awesome, but tonight I was all about using what I had on hand. Three zucchinis have been staring at me for over a week each time I open the veggie drawer. Tired of the usual roasted veggies I decided to whip up some zucchini noodles with a pasta puttanesca sauce. If you haven’t tried this zesty little sauce, it is a must!
In our house, the battle over meatless dinners is usually won by my husband who prefers some sort of M E A T with every meal. I, on the other hand, prefer to balance the meat with the meatless which leaves me looking for hubby approved meatless meals. Quite the challenge! When I googled pasta puttanesca my thoughts were it would be a very labor intensive dish. Nope, to my surprise it’s simple and tasty! I found this awesome recipe on Epicurious.com and it’s been a staple meatless dish in our house for years…approved by my hubby, of course. 🙂
What I love about this dinner is the fact that it is a one pot meal if you make it with zucchini noodles. Those of you that know me, I pretty much tweak any recipe I make. I think it’s the Italian in me…I just can’t stick to a recipe! I have whipped this dinner up almost exactly as it suggests, but tweaked it by doubling the kalamata olives the first time around. It was AMAZING! Since I wanted to use what I had on hand tonight, my sous chef helped me spiralize the zucchs and dinner was on the table in under 30. Again, using what I had on hand I thawed out a few frozen green beans for my little guy while my hubby toasted up GF garlic bread as a simple side for us. Plating or food styling isn’t my forte, which is why the picture above is less than stellar. Despite that, I know you will love this simply delicious dish that is nutritious. It will also leave you happy happy with the lack of dishes left in the sink after dinner. Mangia, mangia and enjoy!
